On Wednesday morning, Jared and I went to get our marriage license. We finished just before lunch and decided to grab something to eat before we went back to work. So we went to Panera and I got a half salad and a half sandwich. The salad was a chicken apple salad which I thought sounded pretty tasty. However, when I started eating it, it was pretty much one of the best salads I've ever had! It was so tasty! Unfortunately, I couldn't find a picture online, but here's the menu description for the Fuji Apple Chicken Salad:
All-natural citrus-herb chicken, field greens, romaine lettuce, tomatoes, red onions, pecans, gorgonzola cheese, apple chips & our white balsamic Fuji apple vinaigrette.
Of course, I got it without the tomatoes and onions because those items quickly ruin a salad for me. But, one of my favorite parts of the salad were the apple chips. Hello - why are apple chips not one of my regular snack foods? They're delicious AND nutritious! Two birds with one stone when you pack those down. I have decided that I need to eat more of those. Sometimes I forget how much I love fruit until I eat it. And I will have to go back to Panera for that salad - so tasty!

I could eat fruit all day every day. But I don't like dried apple or banana for some reason. I've tried many times. Still don't like them. Sounds like a good salad, though!
I love dried apples, when they're still soft, more than apple chips. Now those are delish. So are dried mangos, but I wish they weren't marinated in sugar and then topped with more sugar.
Hey, dried fruit keeps you regular. Just wanted to remind you.
ps, was it sort of exciting when you got your marriage license? When we did it in CA they had us raise our right hand and it was like, wow we're really doing this! Too bad it cost us $70 and then we had to get one in Idaho and it was like $15. Sheesh.
A long time ago my mom made homemade dried apples. They were sooo amazing! It was a sad day when they were all gone.
Too funny! Just today I was telling my sister in law about a missionary companion (that would be you) I had who lived off junk food and still seemed to have energy and be in good shape. Obviously I need to tell her I was mistaken and that you do like salads! LOL! I guess in Portugal when the only option on the salad's menue is lettuce, onions, and tomatoes with oil and vinegar dressing I can't really blame you for not liking them much there. . . I didn't either!
Just thinking about that salad is making my mouth water. But Jeff went through and "dehydrate everything" phase and that made me not really like dried apples. The original is just so much better because your not only eating but it's like your drinking a glass of water too, and I'm always a fan of hitting two birds with one stone.
